The refrigerator is a slow ferment, not a pause

A jar of live kraut at three weeks and the same jar at three months are different foods. Cold slows the lactic acid bacteria; it does not stop them. Small batches make this manageable, because you can size a jar to a fortnight of eating rather than a season of it.

Skim any surface growth as soon as it appears, keep the contents under the brine, and top up with brine at the recipe's concentration rather than water.

What freezing actually does

Illinois Extension's guidance on freezing puts the mechanism plainly. Freezing pauses the aging process and preserves flavor, color, and nutritional value better than some other methods, but natural chemical changes still occur, producing structural changes in fruits and vegetables that affect taste, texture, and quality. Freezing stops the growth of harmful microorganisms, and once thawed those microorganisms become active and multiply rapidly.

For a fermented vegetable, that means the freezer holds flavor roughly where it was and costs you crunch. Freeze what you plan to cook.

Enzymes, rancidity, and air

Ohio State University Extension's freezing basics fills in what goes wrong in storage. All fresh produce contains enzymes, and during freezing enzyme action is slowed but not stopped, so uninactivated enzymes cause color and flavor changes and nutrient loss during freezer storage. Blanching, which is brief exposure to boiling water or steam followed by rapid cooling in water at 60 F or below, inactivates them; over-blanching cooks the product, and under-blanching stimulates enzyme activity and is worse than no blanching at all. Microwave blanching is not recommended because heat patterns are uneven.

The same page explains rancidity: it develops when fat is exposed to air over time, and it is controlled by storing in a way that keeps air away from the product, so remove as much air as possible from the bag or container before freezing.

Practical housekeeping

Store jars away from the refrigerator door, where the temperature swings most every time somebody opens it. Date everything, and eat in the order you made it rather than the order you feel like. Keep canned jars out of light and heat, and check the seals when you bring one out of storage. Common questions

Can I freeze sauerkraut? Yes, and expect softer texture on thawing. It is better in cooked dishes afterward than as a raw garnish.

Does blanching apply to ferments? No. Blanching is a step for freezing fresh vegetables. A finished ferment is not blanched.

Why is my frozen produce grainy and dry looking? Freezer burn, which is moisture loss from the surface. It is a quality problem rather than a safety one, and air exclusion prevents it.

How long will a small live jar keep? Judge by quality and by the signs: skim, keep submerged, and discard on sliminess, softening, or a bad odor.
