A failed batch is only useful if you wrote down the conditions. The four numbers worth recording, and what each one explains when a jar disappoints.

Write these four things down

Salt, by weight. Room temperature, taken at the same time each day. The day count from the moment the ferment started. And how long the vegetables sat between harvest and jar. When a batch disappoints, those four numbers usually identify the cause without any further investigation.

Add the recipe source and the vessel. That is a full record, and it fits on a strip of tape.

Temperature is the number people guess

The National Center for Home Food Preservation's chart of temperatures for food preservation puts the whole field on one scale. Pressure canning temperatures destroy bacteria in low-acid vegetables, meat, and poultry. Water boils at sea level at the temperature used for acid fruits, tomatoes, pickles, and jellied products in a boiling water canner. Warming temperatures prevent growth but may allow some organisms to survive. Between 40 and 140 F is the danger zone, where bacteria, yeasts, and molds grow rapidly. Cold temperatures permit slow growth, and freezing stops growth but may allow some organisms to survive.

A fermenting crock lives in the danger zone on purpose, protected by salt and by the acid the bacteria produce. That is the whole trick, and it is why the salt and the temperature are not negotiable.

Proportions are a safety record, not a taste note

The National Center's general information on pickling says the level of acidity in a pickled product is as important to its safety as to its taste and texture, that you should not alter vinegar, food, or water proportions or use vinegar of unknown acidity, and that there must be a minimum uniform level of acid throughout the product to prevent botulinum growth. It also says to measure or weigh amounts carefully, because the proportion of fresh food to other ingredients affects flavor and in many instances safety.

If your note says "a good handful of salt," you have no record. If it says 43 grams, you can repeat or correct it.

Store canned jars below 95 F, and at 50 to 70 F for best quality. Write the processing date on the lid and the storage location in your notes, because a jar that spent a summer near a furnace is a different jar from one that spent it in a cellar.

Common questions

Is a rough note better than nothing? Yes, if it carries at least the date and the salt weight. Everything else can be reconstructed from those two.

How do I take a useful room temperature? Same thermometer, same place, same time of day. Consistency matters more than accuracy for diagnosing a batch.

Should I record pH? Only a number you actually measured with a method you trust. An estimate written down becomes a fact later.

What if I never wrote anything down and the jar looks odd? Discard it. Without a record and without confidence in the process, there is nothing to reason from.
